Curried Coconut Chicken

This recipe is adapted from the following link:

2 diced raw boneless skinless chicken breasts

olive oil or coconut oil

1 can coconut milk


4 garlic cloves

coconut aminos

1 tsp grated ginger

2 diced bell peppers

1 sweet onion

bag of baby spinach

2 roma tomatoes

2 tsp turmeric

3 tsp garam masala spice blend

black pepper

1 tsp honey

*Can also use cauliflower and kale.

Chop chicken breasts into small pieces and cook in pot with olive oil over medium heat until they turn white. Add in bell peppers. Thinly slice 1 small sweet yellow onion chop tomato and add to the pan. Cook until everything begins to brown. Mince 4 cloves garlic. Add garlic and ginger to pan for about a minute. Add the remaining ingredients (except the coconut milk) and 1/2 cup water. Cook for 10 minutes, then add coconut milk. Cook another 10 to 20 minutes, stirring occasionally. Season more to taste.
